Christmas Potluck from the Galley
I was invited to a Christmas potluck at the park and had planned on using my old standby sweet potato and apple creation but some of the attendees could not do spicy foods. I decided to attempt a “healthy” twist on the usual green bean casserole. There was also a request for no onions so I had to get super creative. Pair this with my novice skills with the new hotplate (remember the scorched popcorn?) I truly wasn’t sure if I would end up standing at the door with a bag of dehydrated fruit chips!
I placed beef broth into the pot with the quinoa and slowly brought to a boil. Once it boiled, I turned it down and let it simmer while I rinsed, trimmed, and snapped fresh green beans. When the quinoa was nearly finished, I added the green bean bits until they were still crispy but just done – a beef broth blanching if you will. Once they were satisfactorily cooked, I took off the heat, added in a can of cream of mushroom soup (thank goodness for pull tops – I don’t have a can opener!) and stirred well. Now, I have to tell you it doesn’t look very appetizing but everyone who had it was extremely pleased. I gave out the “recipe” to several people and we all had a mini quinoa education. A successful endeavor!
